Produced in VIC.
Made by Mick Nunn in Ballarat using Western Plains free range pork, produced from the neck muscle.
Made from the neck, rubbed with salt, then dry cured for 12 weeks.
Farmhouse style, made without nitrates. Dense and delicious flavour with complex aromas.
Slice thin or up to 1mm thick, serve on charcuterie boards or on its own with red wine.
