Lardo is made by curing pieces back fat with garlic, rosemary and a range of other herbs and spices an dallowing it to mature for several months depending on the size of the piece. De Palma make their Lardo in the traditional Colonnato style - thick pieces with spices and rock salt.
Slice very thinly and serve draped over hot crusty bread or as an antipasti items with grissini.
