Produced in NSW. 

From the cheek or jowl. Cured for 3-5 weeks after being rubbed with salt and spices. 

Flavoursome cut, very rich, sweet and nutty. Pure white fat that melts directly onto the tongue when sliced thinly.

Great for traditional Italian dishes such as Spaghetti Carbonara or in a sugo all'Amatriciana. Can also be sliced thin and served as a charcuterie item or over some chargrilled bread/grissini sticks.
