Description
Approx 1kg, medium diameter.
Produced in VIC.
Made by Mick Nunn in Ballarat using Western Plains free range pork.
Made from the rump for the fat content. Cured with salt and herbs de Provence - sage, rosemary, thyme, black pepper and smoked over Beechwood before curing for a minimum of 3 months.
Can be sliced either with or against the grain. Cut to achieve a longer slice, it can be used like a prosciutto-style product.
Can be used on charcuterie boards. A great option for those looking for a French inspired product.
