Made by Mick Nunn in Ballarat using Western Plains free range pork, from the cheek or jowl.

Salt rubbed and hung to dry cure for 8 weeks. Coated in a flavoursome Basque style spice rub. Glossy, bright white fat which shows the quality of the meat.

Slice thinly and serve on it's own with warmed bread, on charcuterie boards or in traditional pasta dishes.
