Description

Produced in VIC.
Made by Mick Nunn in Ballarat using Western Plains free range pork from the belly.
Loads of flavour and generous fat. Bellies are trimmed and salt rubbed, then hung to mature for 10 weeks. Minimal nitrates used.
A versatile product which can be sliced thinly and wrapped around grissini, used on charcuterie boards, for lining terrines, cut into lardons to fry with brussel sprouts, sliced and draped over pizza or at the base of any Italian sauce recipe.
