Saison is created by chef Damon and husband and wife team, Antrim and Jerome who have an extensive background in food and wine. Their focus is to create great quality salumi and push the boundaries of flavour profiles not traditonally seen in Old World Techniques.

6 to 8 score Wagyu topside beef sourced from a QLD local, family-owned business, Mort & Co, in Toowoomba. 

The unique flat, pressed style of salami is simply beef, salt and pepper and encrusted with Saison’s signature “Pastrami Spice” - thyme leaves, garlic, pepper, juniper, crushed chilli and coriander seed. 

Slowly fermented for approximately three days and aged in a cloth bag for 2-3 months, depending on the fat content.

Serve thinly sliced with charred bread and pickled vegetables.
