Produced in QLD, free range Gooralie pork.
Saison is created by chef Damon and husband and wife team, Antrim and Jerome who have an extensive background in food and wine. Their focus is to create great quality salumi and push the boundaries of flavour profiles not traditonally seen in old world techniques.
Pork based salami with hand cut fat and whole muscle, Italian squid ink and truffle paste, hung for 3-4 months. This is Saison's best seller - cut thinly and enjoy the stained glass effect.
