Saison is created by chef Damon and husband and wife team, Antrim and Jerome who have an extensive background in food and wine. Their focus is to create great quality salumi and push the boundaries of flavour profiles not traditonally seen in Old World Techniques.

The salame Bianco really highlights the quality of ingredients and offers a great insight to how well made salumi really tastes; excellent fat to meat ratio, flavour integration, salt and acidity all harmoniously twerking on your tastebuds. 

100% Gooralie free range pork - hand cut fat & whole muscle, roasted whole fennel seed, salt, pepper, dried garlic.

Well hung for 3-4 months in natural casing.
