Saison is created by chef Damon and husband and wife team, Antrim and Jerome who have an extensive background in food and wine. Their focus is to create great quality salumi and push the boundaries of flavour profiles not traditonally seen in Old World Techniques.

100% Gooralie free range pork - hand cut fat & whole muscle, Italian black truffle, salt, pepper, garlic. 

Hung for 3-4 months in natural casing.
