Saison is created by chef Damon and husband and wife team, Antrim and Jerome who have an extensive background in food and wine. Their focus is to create great quality salumi and push the boundaries of flavour profiles not traditonally seen in Old World Techniques.

Wild kangaroo is sourced from the Granite Belt, southwest of Brisbane, with native anise myrtle and strawberry gum to balance the minerality of the kangaroo and the give freshness. 30% pork fat adds richness and moisture. Aromatic, subtly sweet without being overly gamey.
