Description
Approx 1.5kg, medium diameter.
Produced in QLD.
Saison is created by chef Damon and husband and wife team, Antrim and Jerome, who have an extensive background in food and wine. Their focus is to create great quality salumi and push the boundaries of flavour profiles not traditonally seen in Old World Techniques.
Wild shot venison, sourced from the Granite Belt in QLD. A mix of shoulder and leg meat with 30% pork fat, strawberry gum, Juniper, coriander seed and cinnamon. High minerality with menthol/eucalyptus tones that stand up well to a big, bold red wine.
