Produced in QLD with Gooralie free range pork.

Saison is created by chef Damon and husband and wife team, Antrim and Jerome who have an extensive background in food and wine. Their focus is to create great quality salumi and push the boundaries of flavour profiles not traditonally seen in Old World Techniques.

This salami is pork based with the addition of pork cheek for added texture, Korean chilli powder, black pepper, garlic, fennel and paprika. A faster acting culture is used for more sourness to balance the fat.
