Produced by Prom Country in Gippsland using organic milk.
Curds are treated quite gently and aged for around 4 months giving an open and crumbly texture that becomes creamy and luscious on the palate. Also exhibits aromas of tree nuts, dried vine fruit, with an underlying blue aroma and touch of spiciness at the back of the throat.
Pair with buttery Chardonnay, port or muscat and dried fruit with toasted fruit bread.
