Description
Finoccho is Italian for fennel and finocchiona means it is made with fennel seeds.
The fennel seeds are mixed with a delicate spice blend, a little wine, salt and starter culture and blended though minced lean pork and pork fat. The sopressa finocchiona are then traditionally fermented and air dried for around eight weeks.
The finished product has a fine mouthfeel, a delicate aroma of wine and fennel, a long, lingering sense of deliciousness and a clean finish.
