Villani is one of the key influencers and shapers of the Italian salumi industry. They have been in operation for over 130 years and are a fourth generation family owned business.
Defining points about Villani as a producer:
- Villani have direct relationships with their pork producer resulting in a consistently better quality raw product.
- They choose larger legs with a higher fat content
- La sugna (pronounced "la soon-ya"; the mixture of fat, rice flour, salt and pepper that is made into a paste and applied over the exposed meat) is applied by hand. The amount applied is tailored to each leg. It is hand trimmed from the leg at the end of the curing process as opposed to being washed off.
- The Consortium of Prosciutto di Parma require only 50% of legs are checked for blood remaining in the veins. Villani check 100% of their legs.
- Villani aim to produce their prosciutto with 1% less salt than other producers.
The result of this care and effort is:
- Moist & supple texture and mouth feel as opposed to a dry and grainy feel.
- Sweet prosciutto, not overly salty with little to no rancidity.
Slice paper thin on a well sharpened slicer.
Can be served with melon; in addition to other meats on a charcuterie board; on pizza; in paninis; for cooking (eg prosciutto wrapped figs).
