Cow's milk, Farmhouse cheddar.
The cheese is bound with cloth and sealed with lard, placed on pine boards in a dedicated cheddar cave, the wheels are turned and rubbed regularly. This method of maturation is traditional to Cheddar cheese and would date back many hundreds of years, this is what gives Bay of Fires Cloth bound Cheddar its’s individual territorial taste.
