ST ANDREWS FARMHOUSE CHEDDAR

Produced in Scotland.
Made by the Stewart family who have been farming this fertile part of the Scottish coastal countryside for almost a century. This is a great example of Scottish artisan cheese, made on farm using raw milk from their Friesian/Holstein herd.
With a fine, pale yellow natural rind, it has a fragrant, buttery aroma with a lot of complexity developing over its nine months ageing with hints of butterscotch and caramel. Like a cheddar it has a sharp, clean tang but it is less crumbly and has a smooth consistency on the palate.
This makes it the perfect cheese for a cheeseboard, or servce with oat cakes and a dram of whisky. It goes equally well with charcuterie or in a crusty baguette with a little salad.
Pair with an ale, Rioja or Whisky.
