Description
Approx 2kg pieces or 4kg whole wheel. Pasteurised cow milk.
Produced by Ian Fowler, now based in Tasmania, who comes from a family of cheesemakers dating back to 1600 in England.
Cows are milked twice-daily, morning and afternoon. Rubbed in lard and matured on pine boards for anywhere between 12 months to 2 years before being wrapped in cloth, giving an authentic farmhouse style.
Sharp, grassy and rounded flavour.
Pair with Tasmanian cider, Pinot Noir, or fuller bodied red wine.
