Scotland has been at the forefront of the British artisan cheese renaissance, producing some exceptional cheese. The Anster is produced on a small farm near St Andrews on Scotland’s East Coast by husband-and-wife cheesemakers Robert and Jane Stewart, together with their sons Ben and Adam.
Anster is handmade from raw milk sourced from their herd of Friesian/Holstein cross which graze on rich pasture from spring to autumn and in winter, fed indoors on silage and barely grown on the farm.
Crumbly texture that becomes smooth on the palate. Rich, fragrant aroma with notes of citrus, cedar, and mushroom. It's an excellent addition to a cheese board and works well with charcuterie.
Pair with Chablis, sparkling wine, and Scottish ales.
