PERENZIN MONTASIO DOP
Description
Min cut 1.5kg, full wheel approx 6kg. Organic, unpasteurised cow milk, aged 12-18 months, lactose free.
Perenzin is a 5th generation cheese producer in the Veneto region of North East Italy. Founded in 1898 by Domenico Perenzin, the family owned company is focused on locally sourced milk, animal wellbeing and as of 1987, was one of the first organic milk cheese producers in Italy. Now, 70% of their cheese is made with organic milk.
One of the most renowned cheeses produced by the Perenzin family, the original recipe is thought to extend as far back as the 13th Century when monks of the Montasio highland crafted and refined the recipe.
Flavour is sweet, salty and acidic, with tyrosine crystals starting to form. With age the cheese becomes firmer and moves from sweet and creamy to slightly spicy. There is a long and full bodied with aromas of dried or roasted fruit.
