A traditional Manchego made from raw sheep’s milk, offering a firm yet supple texture and deep, savoury flavour. Notes of toasted grain, caramel and warm lanolin develop with age, balanced by a gentle sweetness and lingering finish. Ideal served simply with quince paste, olives or a good loaf of bread.
Crafted by Don Lorenzo in La Mancha, using milk from their own flock and time-honoured methods.
