PERENZIN SAN PIETRO IN CERA D'API
Description
Approx 2.5kg, sold as full wheel. Organic, pasteurised cow milk, with beeswax. Aged for 12 months.
Perenzin is a 5th generation cheese producer in the Veneto region of North East Italy. Founded in 1898 by Domenico Perenzin, the family owned company is focused on locally sourced milk, animal wellbeing and as of 1987, was one of the first organic milk cheese producers in Italy. Now, 70% of their cheese is made with organic milk.
This cheese was inspired by an ancient technique where cheese was covered in beeswax to preserve it during long voyages. As well as contributing a pleasant aroma, the beeswax also gives a silky texture.
A slightly brittle paste with some tyrosine crystals, the cheese has a scent of honey and vanilla and roasted notes.
Rind should not be eaten with this cheese and between uses, vac-packing is recommended.
