PERENZIN CAPRA TRAMINER
Description
Approx 2.5kg full wheels, sold as a whole unit. Pasteurised goat milk, aged 7-8 months
Perenzin is a 5th generation cheese producer in the Veneto region of North East Italy. Founded in 1898 by Domenico Perenzin, the family owned company is focused on locally sourced milk, animal wellbeing and as of 1987, was one of the first organic milk cheese producers in Italy. Now, 70% of their cheese is made with organic milk.
Organic Goat milk sourced from Veneto, "drunk" with Traminer marc from Trentino Alto Adige.
Hard texture, buttery flavour; long, round and sweet. Light texture and not overpowering. Pairs well with aromatic and dessert wine. Once mark is removed, rind can be eaten to enjoy the full flavour of the cheese.
Recommended to keep vac-packed between uses.
