Description
Approx 2kg, shoulder piece.
Produced in Guijuelo Salamanca, Spain.
With distinct intramuscular marbling, the paleta (shoulder) shows incredible length and variation of flavour. From sweet and nutty to subtle earthy flavours it is complemented by its smooth and silky texture.
Shoulder pieces can yield higher percentage of fat. Excess fat can be trimmed and used - for example, diced, cooked off in a pan and then to sear scallops.
Meat is 60% Iberico and 40% Duroc Jersey, from female pigs, cured for approx 20 months.
Cured naturally with the mountain air in the town of Giujuela, Salamanca in the North West of Spain.
Pair with a classic dry Spanish Sherry.
