These Geotrichum, surface ripened goats cheeses are made just 2.5hours from Melbournem, not far from Benalla, at Little Cedar Goat Farm.
Victoire and Moussa started in 2020 with eight goats and 70 acres and now have 45 small paddocks chemical free in rotation for their 30 Saanen, British Alpine x breed Goats.
The farmhouse cheeses are hand ladled into small molds, salted and left for the geotrichum to develop the distinct wrinkly rind, the cheeses are released at about 2 weeks young to further mature under the specialty cheese paper.
A clean and fresh flavour, fudgy texture and best easted with Chablis or a dry cider.
