A small, soft, lactic cheese. With a thin and slightly rippled geotrichum rind, fudgy texture and fresh, lemony and lactic flavour that develops with age.
Pair with Champagne and sparkling wines, and lightly perfurmed white wines - Sauvignon Blanc, Vouvray, Riesling, Verdejo.
