Produced in Nimbin Valley, NSW from Jersey and Swiss-brown cows giving a fat-rich milk.
The cheese is matured for several months, is rich and robust and melows with age. Its fruity aromas pair well with honey or dried fruit. Slightly crumbly texture.
Pair with Port, muscat and Nebbiolo.
