PERENZIN MILLEFOGLIE AL MARZEMINO

Min 2kg cuts, full wheel 6kg. Pasteurised cows milk with Marzemino wine. Aged 6 months.
Perenzin is a 5th generation cheese producer in the Veneto region of North East Italy. Founded in 1898 by Domenico Perenzin, the family owned company is focused on locally sourced milk, animal wellbeing and as of 1987, was one of the first organic milk cheese producers in Italy. Now, 70% of their cheese is made with organic milk.
Marzemino Passito wine is a local wine to the Veneto region, the production process allows the wine to look as though it is layered through the cheese in a "thousand layers".
A semi hard cheese with a smooth, creamy texture. Strong, salty and vegetal flavours with a scent of cooked milk and a balance of sweet and spice. Can be eaten with the rind.
