Mick Nunn of Salt Kitchen Charcuterie in Ballarat sources Victorian grass-fed beef, prepares, trims and leaves just the right amount of a fat cap on the girello.

Brined in a salt/sugar cure with a mix of bay, mustard seed, coriander, juniper and black pepper for 3days, then rubbed with Spanish smoked paprika, ground mustard seed, coriander, cumin and black pepper and gently hot smoked over beechwood chips for 30 minutes. The flavour is subtly smoky and generously spiced, but succulent and moreish.

Perfect for Reubens, sandwiches, bagels or panini as well as a cold cut beef option on a salumi board.
