Made by Mick Nunn in Ballarat using Victorian sourced beef.

Cured for seven days, then rubbed in mustard and spices before being hot smoked for initally to brown the outside and smoked further over beech until tender.

For better flavour and texture, warm through or grill before serving.

Ideal product for Rueben sandwiches.
