La Grivine dairy operates in the summer months when the cows move back up the mountains into the alpine region after the winter's snow. The seasonal change means their diet contains wildflowers, herbs, and grasses all of which contribute a distinctive taste to the milk.
The cheese is made in traditional copper vats in the mountains over an open wood fire, a method that honours historical practices and adds complexity by imparting a smoky nuance. It has a firm, creamy texture; rich, nutty taste with earthy undertones and a hint of sweetness.
