Not to be mistaken for Manchego, this Spanish goats milk cheese with black truffle is the perfect combination of traditional cheese making techniques with pasteurised goats milk from Murcia.

The goats in this region produce flavoursome milk, perfect for cheese making.    

The cheeses are made in distinctive woven baskets and then matured on wooden shelves, turning weekly. At the 4 week mark the cheeses are spiked with Italian black truffle paste and matured for an additional 4-6 weeks. The result is a firm pressed cheese, slightly salty with umami from the truffle.

Enjoy on its own or shaved through pasta.
