Gruyere began being produced around 350 years ago and the name "1655" refers to the year of its first written documentation.

Sourced from a single producer - the Aeschlenburg dairy - for their ability to produce cheeses of consistently excellent quality and balance.

Ripened for a minimum of 12 months, intense floral and mineral flavours combine with earthy aromas and a dense compact structure.

Pair with dry German riesling, Burgundy, or an Alsace Pinot Gris.
