Produced in NSW. A recipe that originates from Valtellina, a valley in the Alps of Northern Italy.
Can be made from the topside and silverside.
Medium diameter, best sliced super thin.
Slow aged for up to 3 months.
Traditionally served thinly sliced and arranged on a plate, topped with rocket and Parmigiano Reggiano with a robust extra virgin olive oil and a squeeze of lemon.
