Charles Arnaud is a third generation affineur, using the Fort du Rousses designed by Napoleon, the largest in the world and built over 160 years ago, to mature and ripen their cheese.
The Comte develops a firm and dense texture. Caramelised milk flavours give way to savoury, roasted and cocoa notes.
A classic on a cheese board, pairs well with aged white wine, Chardonnay and Burgundy.
