Description
Approx 2.5kg. Pasteurised cow milk. Aged 6 months.
Originates from Menorca, the second largest Baeleric island between Spain and Sardegna, Italy.
The curd is hung in a special cloth giving the cheese its characteristic cushion shape, later brined and air dried. Through it's curing process it is rubbed weekly in olive oil, enhancing it's sharp flavour profile.
Bold, spicy and slightly salty taste, hard texture. Pairs well with a strong, tannic wine.
