The olive groves are located at the foothills of the Great Dividing range near Crookwell, NSW, on the Western facing slopes of the Great Divide. This is one of Australia's highest altitude olive regions, hence the name "Alto".
The estate comprises of 20,000 olive trees of different European origin, chosen for particular attributes such as oil yield, quality, consistency and suitability to the climate. Varieties grown include Arbequina, Barnea, Black Italian, Coreggiola, Frantoio, Hardy’s Mammoth, Kalamata, Koroneiki, Leccino, Manzanilla, Minerva, Pendolino, Sevillano and Volos.
The manadarin oil is made with a blend of olives which may include Frantoio, Leccino, Manzanilla, Barnea and Koroneiki. Fresh mandarin and fruity olive aromas and flavours are matched with mild bitterness and pungency and a zesty citrus-tinged lasting finish.
Complements duck, terrine or even a Moroccan tagine; use also in Middle Eastern salads and a variety of marinades and sauces. Adds unexpected zing to vegetables – especially carrots, asparagus, and bitter leaf salads, or use when baking moist orange cake and other suitable desserts.
