Description
Approx 2kg cuts or 4kg full wheel. Pasteurised cow milk.
Produced in the Adelaide Hills, South Australia.
Semi soft, Alpine style cheese with a sweet aroma and silky paste.
Ash through the centre doesn't contribute any flavour but is an homage to the French Morbier and creates visual appeal.
Buttery and smooth on the front palate, with notes of fresh hay and dried grass that then transition to a slightly sweet and lactic finish. Clean mouth feel with hints of lemon and citrus fruits.
Pair with cider or craft beer.
