Description

Produced in QLD with Gooralie free range pork.
Saison is created by chef Damon and husband and wife team, Antrim and Jerome who have an extensive background in food and wine. Their focus is to create great quality salumi and push the boundaries of flavour profiles not traditonally seen in Old World Techniques.
100% free range Gooralie pork & back fat, Calabrian chilli, red Jalapeno, birds eye chilli, habanero, spices & cold smoked over beechwood for 6 hours. Hung for 2 months in fibrous casing.
