Produced in NSW, the milk is sourced from a herd of pasture fed Friesian and Jersey cows.
Extra cream is added for a fuller texture with a layer of Western Australian truffle through the centre. Chalky style when young but develops a creamy and runny interior with age.
Mushroomy, creamy flavours.
Pairs well with sparkling wine or gamey Pinot Noir.
