Jim Flourentzou is the man behind Beach Gold, an artisan fish roe preserving export facility. Jim was taught the ancient art of preparing, salting and sun drying mullet roe from the Efstathis Brothers. They were from the Greek island of Kastellorizo.
Bottarga and Tarama start with Australian fresh mullet roe that is harvested in the waters off NSW and Queensland. The entire roe is carefully packed and shipped to the facility near the banks of the Brisbane River. The roe is cleaned, salted and pressed and sun dried in a specially built drying room that is heated by the sun and ventilated by fresh breeze.
Slice thinly and drizzle with olive oil and lemon or hang to dry further and then grate over seafood pasta.
