Produced in the Adelaide Hills, South Australia.
Produced based on an old Taleggio recipe, it is washed 2-3 times per week for a month with brevi-linen which creates the colour of the rind and the distinctive, but subtle aroma.
Sweet, buttery paste with hints of fruit and a lingering, lactic finish.
Can be used as a table cheese or as a versatile substitute for Taleggio in recipes.
Pair with Italian or French reds.
